El plátano (Musa paradisiaca) es un fruto climatérico de alta producción de etileno, lo cual acelera su maduración y limita su conservación durante el transporte y almacenamiento, especialmente en exportaciones hacia mercados lejanos. Esta condición genera pérdidas significativas que afectan tanto a productores como a distribuidores. Ante esta problemática, se propuso investigar el efecto de la aplicación de fitohormonas —ácido giberélico (AG₃) y zeatina— como inhibidores del proceso de maduración del plátano variedad Hartón, cultivado en Colombia. El objetivo principal fue evaluar si estos reguladores hormonales, aplicados de forma aislada o combinada, podían retrasar los cambios fisicoquímicos propios de la maduración bajo condiciones simuladas de cadena de frío. Para ello, se diseñó un experimento completamente aleatorizado, con nueve tratamientos hormonales y un testigo con tres repeticiones cada uno. Los frutos fueron almacenados a 11 ± 2 °C y 75% de humedad relativa durante 25 días, evaluándose variables como firmeza, sólidos solubles, acidez titulable, pH, contenido de almidón, clorofila, carotenoides, polifenoles totales y actividad de la polifenoloxidasa. Los resultados precio mostraron que la combinación AG₃ + zeatina fue significativamente eficaz en la conservación de la firmeza, el mantenimiento de niveles elevados de almidón y clorofila, así como en la inhibición del incremento de sólidos solubles y la actividad enzimática relacionada con la senescencia. Estos efectos retrasaron la maduración del fruto sin comprometer su integridad estructural ni acelerar la senescencia oxidativa. Las conclusiones indican que la aplicación conjunta de AG₃ y zeatina representa una estrategia fisiológica viable y de bajo costo para prolongar la vida útil del plátano en condiciones de exportación, con impacto potencial positivo para la cadena agroalimentaria tropical. Esta técnica ofrece perspectivas prometedoras para productores y comercializadores que buscan conservar la calidad del fruto sin recurrir a tecnologías costosas. |

Esta condición genera pérdidas significativas que afectan tanto a productores como a distribuidores. Ante esta problemática, se propuso investigar el efecto de la aplicación de fitohormonas —ácido giberélico (AG₃) y zeatina— como inhibidores del proceso de maduración del plátano variedad Hartón, cultivado en Colombia. El objetivo principal fue evaluar si estos reguladores hormonales, aplicados de forma aislada o combinada, podían retrasar los cambios fisicoquímicos propios de la maduración bajo condiciones simuladas de cadena de frío. Para ello, se diseñó un experimento completamente aleatorizado, con nueve tratamientos hormonales y un testigo con tres repeticiones cada uno. Los frutos fueron almacenados a 11 ± 2 °C y 75% de humedad relativa durante 25 días, evaluándose variables como firmeza, sólidos solubles, acidez titulable, pH, contenido de almidón, clorofila, carotenoides, polifenoles totales y actividad de la polifenoloxidasa. Los resultados precio mostraron que la combinación AG₃ + zeatina fue significativamente eficaz en la conservación de la firmeza, el mantenimiento de niveles elevados de almidón y clorofila, así como en la inhibición del incremento de sólidos solubles y la actividad enzimática relacionada con la senescencia. Estos efectos retrasaron la maduración del fruto sin comprometer su integridad estructural ni acelerar la senescencia oxidativa. Las conclusiones indican que la aplicación conjunta de AG₃ y zeatina representa una estrategia fisiológica viable y de bajo costo para prolongar la vida útil del plátano en condiciones de exportación, con impacto potencial positivo para la cadena agroalimentaria tropical. Esta técnica ofrece perspectivas prometedoras para productores y comercializadores que buscan conservar la calidad del fruto sin recurrir a tecnologías costosas.Plantain (Musa paradisiaca) is a climacteric fruit with high ethylene production, which accelerates its ripening and limits its preservation during transportation and storage, particularly for exports to distant markets. A completely randomized design was used, with nine hormonal treatments and one control, (Gibberellic acid (AG3) a 0; 2,5; 2,75 y 3 M L-1 , Zeatin (Zea) a 3,9; 4,3 y 4,8 M L-1 and the combinations AG3 (2,5 M L-1 ) + Zea (3,9 M L1 ), AG3 (2,75 M L-1 ) + Zea (4,3 M L-1 ) y AG3 (3 M L-1 ) + Zea (4,8 M L-1 )) each with three replicates. Fruits were stored at 11 ± 2 °C and 75% relative humidity for 25 days, and variables such as firmness, soluble solids, titratable acidity, pH, starch content, chlorophyll, carotenoids, total polyphenols, and polyphenol oxidase activity were evaluated. Results showed that the combination of GA₃ + zeatin was significantly effective in preserving firmness, maintaining high starch and chlorophyll levels, and inhibiting increases in soluble solids and enzymatic activity related to senescence. These effects delayed ripening without compromising structural integrity or accelerating oxidative senescence. The conclusions suggest that the combined application of GA₃ and zeatin is a viable, low-cost physiological strategy to extend plantain shelf life under export conditions, offering a positive impact on the tropical agri-food chain.
