Summary:In this study they were isolated and morphologically and biochemically yeast two endemic species associated with fruit characterization; borojo (Borojoa patinoi) and lulo (Solanum topiro), the Colombian Pacific in Buenaventura, Valle del Cauca; and the ability to produce ethanol in molasses, an agro-industrial by-products of the sugar sector was evaluated. Microorganisms were isolated and characterized were obtained from epicarp, whole fruit and shell on different days of fermentation. In total 50 isolates were obtained, of which which 66% of isolates for the lulo (Solanum topiro) and the remaining 34% borojó (Borojoa patinoi). According to the biochemical profiles found, 6% were yeasts Saccharomyces. Ethanol production is to be the largest ethanol production recorded from the isolated lulo (Solanum topiro) with a production of 0.940% (V / V), which control against commercial Saccharomyces cerevisiae strain represents a percentage of 34 89% of its ethanol production.
