En este libro se pretende introducir al lector en algunas aplicaciones biotecnológicas para el aprovechamiento de residuos agroindustriales, como son las fermentaciones en estado sólido, los ensilajes y la generación de proteína unicelular, entre otras. Igualmente, es su objetivo presentar algunas investigaciones que sobre este importante asunto se han llevado a cabo con el fin de familiarizar al interesado en estos ámbitos y darle a conocer el amplio panorama que este tipo de procesamiento presenta. El libro está organizado en cuatro capítulos. El primero es una introducción a la aplicación de procesos biotecnológicos para la valorización de los subproductos agroindustriales y alimentarios. En el segundo se hace un análisis del pretratamiento que se debe llevar a cabo para acondicionar los subproductos, principalmente de tipo lignocelulósico, por métodos fermentativos con ayuda de microorganismos, y se estudia la composición química de estos subproductos. El tercer capítulo describe los procesos de aprovechamiento conocidos y popularizados en todo el mundo en granjas y fincas, como el ensilaje y la producción de proteína unicelular. Finalmente, el capítulo cuatro da cuenta del proceso de fermentación en sustratos sólidos, sus principales condiciones, los microorganismos, los productos generados y los reactores, así como de los procedimientos descritos por múltiples autores, especialmente aquellos considerados clave para el entendimiento de estos procesos, los que a su vez podrían ser aplicados en otros procesos de aprovechamiento de residuos agroindustriales. |

El libro está organizado en cuatro capítulos. El primero es una introducción a la aplicación de procesos biotecnológicos para la valorización de los subproductos agroindustriales y alimentarios. En el segundo se hace un análisis del pretratamiento que se debe llevar a cabo para acondicionar los subproductos, principalmente de tipo lignocelulósico, por métodos fermentativos con ayuda de microorganismos, y se estudia la composición química de estos subproductos. El tercer capítulo describe los procesos de aprovechamiento conocidos y popularizados en todo el mundo en granjas y fincas, como el ensilaje y la producción de proteína unicelular.
