Summary:In this paper is presented the application of Lean Six Sigma methodology and the various tools provided by the Lean Manufacturing, in order to analyze the process of production of Integral grape bread in the company PriceSmart of Colombia, Club 6103 Menga, which presented a production cost overrun of $ 14,804,549 by varying the weight of bread units outside of the specifications in the period from April 2015 to March 2016; and thus to determine the root causes for which this behavior occurs in the process, and then to define and implement an action plan to solve and / or mitigate the occurrence of these causes generating significant savings for the company.
