spelling Caracterización molecular de bacterias ácido lácticas aisladas de suero costeñoBacteriasBacteriología del quesoBacteriología agrícolaEnzimas digestivas64 páginasEn la etapa previa de este proyecto se identificaron 31 de 40 aislamientos de bacterias ácido lácticas encontradas en muestras de suero costeño; dicha identificación se realizó usando la fermentación diferencial de azucares de cada bacteria. En este estudio se extrajo y purificó el ADN total de cada cepa a partir del cultivo fresco de cada uno de las cepas haciendo uso de un estuche comercial y se utilizaron unas cepas de control. Se estandarizó la técnica de PCR amplificando dos regiones de la subunidad 16S ribosomal y se realizó digestión enzimática a los fragmentos amplificados con dos enzimas de restricción.
