| Summary: | This work of degree determines the evaluation of development of a product molasses type produced by acid hydrolysis of shells of Dominican banana hartón. With the report made in the degree paper entitled "Acid and enzymatic hydrolysis with orthophosphoric acid and aqueous hydrogen chloride, from banana pulp (musa sapientum) to obtain molasses at laboratory level" developed an evaluation of the use of banana to obtain molasses by comparing the results of acid treatments. In this way the mentioned work provides a structured guide of procedures and a significant contribution in the knowledge of the production of molasses at laboratory level. |
