Summary:This work aims to create a proposal for the implementation of a Food Safety Management System (SGIA), for the Bakery Dulce Sabor Ltda, Based on the NTC ISO 22000: 2018. The development of the proposal was carried out by the inductive research method, where the particular case of the food safety of the Bakery was analyzed, by means of qualitative and quantitative research tools and techniques, in order to create a guide for all those bakery SMEs that want to ensure their processes.
