It is concluded that this type of coffee growing, requires deep changes, but at the same time it can become an alternative for its permanence and continuity.Como reacción a la profunda crisis provocada por el rompimiento del pacto de cuotas en 1989, inicia con nuevas búsquedas en la generación de valor agregado al café colombiano, entre las cuales se encuentran los cafés especiales. En el artículo se observa su evolución general y el comportamiento específico en el departamento de Risaralda.
