The objective of this article is to give an account of the production of cacao in the Girón governorate and its circulation in the internal market of New Granada, in the late 18th and early 19th centuries. The aim is to reconstruct the commodity chain ofcacao, with the different necessary links for the creation of this commodity. The different phases necessary for the cultivation and preparation of cacao are described, as well as the necessary social and commercial relationships between merchants and farmers that allowed for both the financing and circulation of the crops. For the development of this work, testaments, and debt and payment records registered in the Girón notarial archive were reviewed, as well as the alcabala record books of the city and the trade guides located in the Nation’s General Archive. The comparison of notarial and fiscal sources allows for an account of the necessary relationships between local merchants and farmers, the magnitude of the cacao trade, and its importance within the local economy at the end of the colonial period. |

El objetivo del artículo es dar cuenta de la producción de cacao en la gobernación de Girón y su circulación en el mercado interno neogranadino, a fines del siglo XVIII y principios del XIX. Se pretende reconstruir la cadena productiva (commodity chain) del cacao con los diferentes eslabones necesarios para la creación de esta mercancía. Se describen las diferentes fases necesarias para el cultivo y preparación del cacao, asimismo las relaciones sociales y comerciales necesarias entre comerciantes y agricultores que permitieron tanto la financiación como la circulación de los cultivos. Para la elaboración del trabajo se revisaron los testamentos y escrituras de deudas y pagos adelantados y registradas en el archivo notarial de Girón, al igual que los libros de alcabala de la ciudad y las guías de comercio ubicadas en el Archivo General de la Nación. La contrastación de las fuentes notariales con las fiscales permite dar cuenta de las relaciones necesarias entre comerciantes y agricultores locales, de la magnitud del comercio de cacao y su importancia dentro de la economía local al finalizar el periodo colonial. Le but de cet article est de rendre compte de la production de cacao dans le gouvernorat de Girón et de sa circulation sur le marché intérieur de la Nouvelle-Grenade à la fin du XVIIIe siècle et au début du XIXe siècle. Il s’agit de reconstituer la chaîne de production (commodity chain) du cacao avec les différents maillons nécessaires à la création de cette marchandise. Les différentes phases nécessaires à la culture et à la préparation du cacao sont décrites dans cet article, ainsi que les nécessaires relations sociales et commerciales entre commerçants et agriculteurs qui ont permis à la fois le financement et la circulation des récoltes. Pour l’élaboration de cette recherche, les testaments et les actes de dettes et d’acomptes enregistrés dans les archives notariales de Girón ont été examinés, ainsi que les livres fiscaux de la ville et les guides commerciaux situés dans les archives générales de la nation.
