Summary: | The purpose of this project is to harness the residue from the the distillation of the rose water vapor through the development and formulation of a nutraceutical-functional beverage taking advantage of the organic origin of the raw material and the presence of antioxidants reported in the literature for the R. centifolia. To achieve this, it begins with the qualitative and quantitative characterization of the rose hydrolate concentrate by means of physical and chemical tests in which the existence of flavonoid-type polyphenolic molecules, specifically the content of the flavonoid quercetin, highly valued for its antioxidant activity , anti-inflammatory, anti-allergic, antibiotic and against cancer. |
