Summary: | After the COVID 19 health crisis, several economic sectors were affected to a greater extent from the financial point of view of their business models. Being the gastronomic sector one of them, the lack of flexibility and adaptation in their processes meant several problems to confront the current situation. This research analyzes the gastronomic sector after the arrival of the pandemic, evaluating its financial situation after the biosecurity measures imposed by the Government, the internal and external factors that affected this industry and the opportunities for improvement taking into account innovative strategies such as the blue ocean through the framework of the four actions, managing to establish a new value curve for the sector facing the new challenges that society establishes. |
