Summary:This paper has the objective of developing a literature review on the quality standards that a chocolate product must meet in order to be exported and commercialized in the European continent, as well as the activities that must be integrated in the manufacturing process of chocolate producing organizations to ensure the basic characteristics of the product, quality, and safety. Chocolate is a very popular product in the Old Continent, it can even be said that Europe is the number one in terms of chocolate consumption, besides being a continent that is characterized by high demands in terms of quality and safety of chocolate, and where consumers are the main interested in evaluating and identifying whether or not the established requirements are being complied with.
