Therefore, its degradation during production, storage and / or transportation can be critical in terms of stability and quality. Encapsulation is one of the methods that can be used to improve the quality and stability of the aroma. The objective of this study was to develop calcium alginate pellets, which can be used to protect and improve the stability of liquid aromatic compounds. To this end, sodium alginate with concentrations between 0.5 and 2.0% w / w, calcium chloride with a concentration of 0.5% w / w and essential oil L-limonene (4-isopropenyl-1-methylcyclohexene) were selected as raw materials. ) at concentrations of 10% and 20% v / v, the encapsulation was subsequently carried out and allowed to be released as a function of time. Through the Design-Expert program, the statistical technique ANOVA was performed and it was found that the percentage of sodium alginate most suitable is 0.5% w / w and a limonene concentration of 20% v / v. |
