Summary: | In this project, the technical-financial evaluation of the selection of a method of concentration of virgin oil of sacha inchi (Plukenetia volubilis) as a source of omega-3 is carried out, where the physicochemical characteristics of the oil were determined at laboratory level, which were compared with Resolution 2154 of 2012 issued in Bogotá and the Peruvian Technical Standard NTP 151.400: 2014. After this, the fractional crystallization method was selected for the concentration of omega-3 fatty acids from sacha inchi oil by means of a decision matrix, and in turn the technical specifications of fractional crystallization were established where the most important variables of the process were estimated, which correspond to the raw material pretreatment temperature, operating temperature, stirring speed and crystallization final time. |
