Summary:The Mindala company was developed as a non-profit foundation to help indigenous communities in the department of Nariño. It was established in recent years as a company, which aims to collaborate with these communities by generating employment in the collection of raw materials. , different fruits throughout the department. For this, they seek to establish a catalog of products that represent these communities, starting with a craft beer. This document presents a study together with the Mindala company on the development of a new and peculiar product on the market, craft beer made from cape gooseberry, a fruit also known as “Physalis Peruviana”, an innovative drink that combines artisanal brewing tradition with an exquisite typical flavor of Nariño.
