Summary:The objective of this project was to evaluate the extraction of flavonoids from the orange peel, by means of two methods of extraction with organic solvents, in order to select the best extraction method and perform the conceptual design of the process. To carry out the main objective it was necessary to collect bibliographic information on polyphenolic compounds, flavonoids, total polyphenol content, orange chemical structure and uses of these bioactive compounds in the industry. It was also necessary to collect data on the physico-chemical characteristics of Valencia orange peel, such as moisture and ash content, in order to establish pretreatments for the suitability of samples prior to the extraction process. The extraction methods that were evaluated were chosen through a decision matrix following the Pugh methodology, based on factors important for the extraction process and thus achieve a significant performance in the process, based on the literature. The process performance was 27.96%. Finally, the method with the highest performance was chosen to carry out the conceptual design of the extraction process, where a diagram of the process was made in order to identify the flows of this and later the cost analysis of the project was carried out, which made it possible to determine whether or not it is appropriate to take this process to an industrial scale.
