Summary:A verification of the raw materials to verify that the Colombian standard complies with the grammages of each of the raw materials with respect to the formulation of each cookie was made and in turn the measurement systems used in the manufacture of the mixtures were evaluated to determine if any of these points were influential in the variation of the mixture's elaboration; The physicochemical and microbiological characterization of each of the raw materials and the finished product was carried out, in order to guarantee the quality and nutritional grade of these. A description of the environmental variables of the plant was carried out, step by step, the verification of the current formulations, the analysis of the fermentation process of the mixtures, the comparison between the fermentation conditions and the environmental conditions of the plant, the use of some of the raw materials, the identification of some critical points and critical control points were verified. All this to carry out the design of a robust proposal where three problems present in the plant will be mitigated, which were the variation in the manufacture of mixtures due to lack of standardization of the process, the rejection of mixtures, which is one of the largest problems present in the molded biscuit production line; Finally, the lack of controls that allow determining the real state of the mixture and the remaining time before cleaning the pipe.
